Closing Kitchen Monday


Clean & Wipe Hood/Empty Grease Trap *

Drag and Drop (or) Choose Files

    Filter all fryers *Minors may NOT complete this step

    Drag and Drop (or) Choose Files

      Turn off 2-3 fryers and send baskets to dish *
      Keep one pair of tongs and send the rest to dish *
      Keep one spatula and send the rest to dish *
      Keep one pan and send the rest to dish *
      Send tray under heat lamp to dish, keeping only the fry bowl *
      Stock appetizer freezer *

      Drag and Drop (or) Choose Files

        Fill Sauces and Refrigerate *

        Drag and Drop (or) Choose Files

          Refrigerate cheese sauce and beer cheese *
          Stock and flip all toppings in kitchen cold-well *

          Drag and Drop (or) Choose Files

            Stock all toppings and flip salad station cold-well *

            Drag and Drop (or) Choose Files

              Change Shrimp Bath/Breading *
              Plastic wrap cheeses *
              Change cheese containers in cold-well *
              Pull philly meat, tortillas and buns *Should be 3 boxes of philly meat defrosting in the walk-in

                Clean break table *

                Drag and Drop (or) Choose Files

                  Clean employee bathroom *Wipe sink, scrub toilet, check trash

                  Drag and Drop (or) Choose Files

                    Wipe down the sides and fronts of ALL equipment *

                    Drag and Drop (or) Choose Files

                      Turn off oven, grill and flattop *
                      Turn off heating table *
                      Cover and refrigerate chili and marinara *
                      Skim all fryers *

                      Drag and Drop (or) Choose Files

                        Send remaining kitchen dishes to dish *
                        Clean grill and change foil *

                        Drag and Drop (or) Choose Files

                          Clean flattop and send tray to dish *
                          Season flattop LIGHTLY with olive oil *

                          Drag and Drop (or) Choose Files

                            Clean out both microwaves *

                            Drag and Drop (or) Choose Files

                              Clean all carts *

                              Drag and Drop (or) Choose Files

                                Clean Mop Sink *

                                Drag and Drop (or) Choose Files

                                  Turn off remaining fryers and cover *
                                  Zip tortillas and close any bread products *
                                  Push bread cart into walk-in *
                                  Take out all trashes *
                                  Replace trash bags and put trash cans back in their spots *
                                  Sweep & mop kitchen *
                                  Sweep & mop infront of walk-in and under microwave shelf *
                                  Sweep & mop back storage *
                                  Help dish finish up their checklist(s) *
                                  Put all kitchen dishes away and set them up *
