Opening Kitchen Checklist


Turn on Lights, Hood Vent & Return Air *
Pull Bread Cart out of Cooler *
Turn on Heating Table & Check Water Level *
Heat Marinara & Chili *Heat in a pot of boiling water up to temp
Pull Sauces out of Cooler *Make sure all sauces are full and bottles are clean
Uncover Cold Well Items *Uncover all items in both cold wells, and wash the lids in the dish washer right away.
Turn all Fryers on *All fryers should be set to 350 degrees
Blanch Wings (If Needed)Check to see if more wings are needed.
Turn Oven on *Set the oven to 450 degrees
Turn Flattop on *Both sides, about half-way
Turn Grill on *Left Side ONLY unless busy, about 3/4 of the way
Setup Utensils *Make sure you have 2 tongs, 3 spatulas, 2 knives and a pizza cutter.
Check for Towel Buckets *Double Check that Prep made towel buckets & check PPM
Check Stock *Double check that everything is stocked and ready to go
